Ingredients:
- 4 eggs
- 3 cups
whole milk
- 1 cup cream
- 1 cup brandy
or bourbon
- 1/2 cups
superfine sugar
- 1 ½ tsp ground nutmeg( plus ½
tsp for dusting )
- Separate the egg yolks and put them into a large bowl and beat the egg yolks until they turn light and fluffy.
- Slowly add the sugar, continuing to beat the mixture until it thickens.
- When the sugar is added. Switch to using a wooden spoon or spatula and slowly stir in the brandy a little at a time, then cover the mixture with plastic wrap or a lid and leave in the fridge to chill for at least 3 or 4 hours.
- Before serving, stir the milk into the yolk mixture along with the 1 ½ tsp of ground nutmeg.
