Ingredients:
- Chicken boneless (chopped) 2 cups
- Eggs 2(beaten with some salt and black pepper)
- Carrots 2 large(cut in small pieces)
- Green Onions 2 or as desired(cut into small pieces)
- Boiled Rice 4 cups
- Chinese Salt 1 tsp
- Salt 1/2 tsp
- Black Pepper 1 tsp or as your taste
- Soya sauce 2 tsp
- Corn Flour 1/2 tsp
- Oil or Ghee for frying
- Marination of Chicken:
- Add salt, Chinese salt, Soyasauce, and Cornflour in chicken and mix it well with hands.
- Keep it aside for at least 2 or3 hours.
Method:
- Heat the oil and fry Chicken pieces for few minutes.
- Cover and set it aside.
- In a frying pan add 2 tablespoons oil. When the oil is hot, add the eggs Cook until they are lightly scrambled.
- Now put some oil in pan and fry up the vegetables until tender.
- Add Chicken, Eggs, (Salt, Chinese salt and pepper to taste) in the vegetables.
- Cook on low heat for 2 minute.
- Add Cooked Rice to the mixture and mix well.
- Add desired amount of soya sauce in the end.
- Stir over medium heat until mixed well.
- Serve hot. Enjoy!!!!
