Chocolate Truffle Tarts


Ingredients:

For Crust:

  • 1 Cup brown rice flour
  • ¾  Cup almond meal
  • ¾  Cup sugar
  • 1/2 Cup cocoa powder
  • 1/4 Cup tapioca flour
  • 1/2 Cup margarine

For Filling:

  • 1 ½ Cups Creamer
  • 1 ½ Cups Semi- Sweet Chocolate Chips
  • 12 Ounce dark Chocolate bar, chopped
  • 2 tsp pure Vanilla extract

Preheat Oven 350

Preparation:

  1. In a bowl whisk together all crust ingredients and add margarine and stir well to form soft dough.
  2. Press dough 1-inch deep into the bottom and sides of an ungreased, 9-inch tart pan with a removable bottom.
  3. Bake 10 minutes, or until slightly puffed.
  4. Allow to cool completely on a wire rack, then remove outer ring.
  5. Bring creamer to a boil in a pan on medium heat. Remove from heat and add remaining ingredients, stirring until chocolate is melted and mixture is smooth.
  6. Cover and chill in refrigerator for 1 hour.
