Chicken Egg Fried Rice


Ingredients:



  • Chicken boneless (chopped) 2 cups
  • Eggs 2(beaten with some salt and black pepper) 
  • Carrots 2 large(cut in small pieces) 
  • Green Onions 2 or as desired(cut into small pieces)
  • Boiled Rice 4 cups 
  • Chinese Salt 1 tsp
  • Salt 1/2 tsp
  • Black Pepper 1 tsp or as your taste 
  • Soya sauce 2 tsp 
  • Corn Flour 1/2 tsp 
  • Oil or Ghee for frying 
  • Marination of Chicken: 
  • Add salt, Chinese salt, Soyasauce, and Cornflour in chicken and mix it well with hands. 
  • Keep it aside for at least 2 or3 hours.


Method:



  1. Heat the oil and fry Chicken pieces for few minutes. 
  2. Cover and set it aside. 
  3. In a frying pan add 2 tablespoons oil. When the oil is hot, add the eggs Cook until they are lightly scrambled. 
  4. Now put some oil in pan and fry up the vegetables until tender. 
  5. Add Chicken, Eggs, (Salt, Chinese salt and pepper to taste) in the vegetables. 
  6. Cook on low heat for 2 minute. 
  7. Add Cooked Rice to the mixture and mix well. 
  8. Add desired amount of soya sauce in the end. 
  9. Stir over medium heat until mixed well. 
  10. Serve hot. Enjoy!!!!
